Spring in Washington means the return of salmon — and with it, one of the most important ingredients in the kitchen.
This class is about seeing the whole picture. You’ll experience salmon from start to finish as our chef team works through the breakdown of whole, seasonal fish and demonstrates how different cuts are handled, prepared, and cooked with intention.
This experience leans more into demonstration and guided tasting than hands-on cooking. Guests will gather around the workshop as the class unfolds, with opportunities to ask questions, step in, and engage more directly throughout. Along the way, you’ll taste multiple preparations of salmon, learning how technique, temperature, and timing shape the final dish.
As the evening progresses, the East Alder Table team will round out the table with a seasonal spread designed to complement what you’ve learned — bringing everything together into a full, shared meal.
It’s an immersive, workshop-style experience focused on building confidence with fish, deepening your understanding of technique, and enjoying the process along the way.
