The 2023 Tilting at Windmills is layered and structured, aged to bring polish to its tannins while preserving vibrancy and lift. Built from Grenache, Cabernet Sauvignon, and Syrah, it opens with kirsch, cassis, roasted herbs, graphite, and warm spice. It is generous yet grounded, powerful without heaviness.
For this tasting, we’re joined by Billo Naravane, owner and winemaker and one of fewer than 500 Masters of Wine worldwide. Billo will guide the experience alongside us, sharing insight into the blend, its structure, and the thinking behind its evolution in barrel.
We’ll explore how richness softens tannin. How spice amplifies fruit. How umami deepens the wine’s savory edge. How each bite shifts the expression in the glass.
