A Taste of Hawaiʻi's History
The plate lunch traces its roots to Hawaiʻi's plantation era in the late 1800s, when immigrant workers from the Philippines, Portugal, China, Korea, Japan, and many other cultures brought meals from home to enjoy during long days in the fields. Over time, these culinary traditions blended together and evolved into the iconic Hawaiian plate lunch.
Today, the plate lunch remains one of Hawaiʻi's most beloved comfort foods, typically featuring rice, macaroni salad, and a flavorful protein. It is a delicious reflection of the islands' multicultural heritage and spirit of community.
Meet Northwest 808
Brook Browning | The Northwest Girl
Raised in the Seattle area with summers spent in Alaska, Brook developed a love for food and local ingredients early on. From exploring Pike Place Market with her mom to fishing and crabbing with her dad, the Pacific Northwest has always been home.
After graduating from South Seattle College's Culinary Arts program, Brook worked in catering, restaurants, and hospitality throughout the Seattle area. Her passion for food production eventually led her to Walla Walla, where she completed the Enology and Viticulture program at Walla Walla Community College and spent four harvest seasons in the wine industry. Ultimately, hospitality called her back. Today, she and her husband Kalani bring together their Northwest and Hawaiian roots through Northwest 808, serving Hawaiian inspired comfort food made with Northwest ingredients.
Kalani Cayaban | The Island Guy
Born and raised in Honolulu, Hawaiʻi, Kalani grew up in a family where food, community, and aloha were central to everyday life. From picking mangoes in the backyard to helping prepare traditional Hawaiian dishes, food was always a way to connect with family and culture.
His father's career in the hotel industry introduced him to cuisines from around the world and sparked a lifelong appreciation for hospitality. After earning a degree in Athletic Training from Washington State University, Kalani continued working in hospitality and eventually found his way into bartending. Though he once planned to return home to Hawaiʻi, Washington became home. Today, he shares the flavors and traditions of the islands through Northwest 808.
Together, Brook and Kalani are passionate about bringing people together through great food, warm hospitality, and the spirit of aloha!
