Class: Pan Sauces
We’ve all seared something in a pan and been left with all those little browned bits stuck to the bottom. That’s fond, and that’s flavor! In this class, we’re going to put it to work. We’ll talk about deglazing, reducing, when to add stock, how to finish a sauce with butter and, most importantly, how to taste and adjust as you go.
We’ll put it all into practice with mushrooms on grilled toast and a sherry pan sauce, a simple shrimp scampi with white wine, garlic, lemon and plenty of butter, then finish with seared pork chops and a cider mustard pan sauce, served with buttery mashed potatoes and braised cabbage and apples.
This one is less about memorizing recipes and more about understanding what’s happening in the pan, so the next time you sear something at home, you’ll know exactly what to do with all that flavor left behind.
