In this hands-on class, we’ll break down and spatchcock whole chickens while learning the fundamentals of cast iron cooking, heat management, seasoning, and roasting for crisp skin and juicy meat. Together, we’ll prepare a bright herb salsa to balance the richness of the chicken along with seasonal accompaniments designed for sharing around the table.

Along the way, we’ll discuss carving, resting, layering flavor, and the small techniques that help simple ingredients feel polished and deeply comforting.
