Class: Pork Milanese with Hand-Pounded Pistachio Pesto
Crispy, golden pork, hand-pounded pesto and a bright, juicy summer salad come together in this hands-on Italian-inspired dinner.
We’ll start with pork cutlets and learn the fundamentals of a proper Milanese—from pounding the pork to an even thickness and building a clean breading station to managing the pan for a beautifully crisp, golden crust while keeping the pork tender and juicy.
Then we’ll slow things down and make pesto the old-fashioned way. Using a mortar and pestle, we’ll crush garlic, pistachios and fresh herbs by hand before working in cheese and good olive oil. You’ll learn how texture, seasoning and a little patience transform a handful of simple ingredients into something completely different from pesto made in a machine.
To bring it all together, we’ll make a fresh composed salad loaded with juicy cherry tomatoes, shaved fennel, peppery arugula, pickled red onion, fresh herbs and Parmesan, simply dressed with lemon and olive oil.
We’ll finish our plates with crispy Pork Milanese, spoonfuls of pistachio pesto and plenty of that bright, crunchy salad before gathering around the table to enjoy dinner together.
